Pizza has been a staple American food since it was brought over from Italy back in the late 1800's. Recently we've seen a resurgence in pizza innovation since the recession of 2008 when restaurants had to start thinking of new ways to get consumers to come back to their establishments instead of saving money by buying a frozen pizza to take home.

Millennials (18-34 y.o.) are the #1 consumer of pizza across all categories from frozen to take out. Lots of the innovation and trends that we've seen have been targeted to this consumer category. From Cultural Comfort (taking pizza into new ethnic territory) to Refreshed Indulgence (bringing "Better For You" ingredients to pizza), pizza trends are continuously evolving around millennial consumers.
