For example, Grant Sceney (2014 World Class Canadian Bartender of the Year) will whip up Apparitions of Purity with Tanqueray 10 infused with pear green tea, sweet vermouth, beet juice, radish gastrique and yuzu. Jayton Paul of Nightingale restaurant will be pouring Fir Trade, mixing Ford's Dry Gin, Cherry Shrub, Fino Sherry, peach bitters and ginger beer.
