Shrubs, also known as drinking vinegars, have gained a lot of momentum recently around bar and cocktail culture.  Starting with the  shortage of limes back in 2014, bars started incorporating these vinegars into many of their signature cocktails as an acidic replacement.

The classic cocktail trend, which doesn't seem to be going away any time soon, has also been a great driver for the resurgence of shrubs since they have been around for hundreds of years and were used in many cocktails in the past.

Hand crafted soda's popularity has given shrubs an area to play in as well.  Along with the health benefits it provides, it's sweetness and tartness gives cocktails a unique edge and offers a refreshing alternative to sodas.

With vinegar based beverages being a top trend at previous Fancy Food Shows, it's no wonder it has peaked the interest of Millennials and we can see why.
