The Winter Fancy Food Show (WFFS) features thousands of innovations and trends that will shape the future of the food and beverage industry, making it a major source for inspiration. We attended the 44th Annual Winter Fancy Food Show at the Moscone Center in San Francisco, CA to discover and report on the top food, drink and flavor trends across product categories. We're excited for what is to come in 2019.
Plant-based, sustainability and superfoods are among the industry buzzwords that made a big impact at the show. Alongside the 10 up-and-coming trends that we have identified for 2019 below, we saw an abundance of new products validating our past trend reports including: hyper functionality, probiotics, and flavors including lemongrass, ginger & honey. In addition to these past trends, we identified 10 key future focused trends you need to consider in 2019 and beyond.

At this year’s Fancy Food Show, we saw spreads expanding into new territories of functionality. Traditionally reserved for the snack table, spreads have been elevated to the next level. We saw low-calorie, high-protein spreads like Legendary Foods’ Blueberry Cinnamon Bun Nut Butter, functional spreads for fruits and veggies and “free-from” spreads that excluded dairy from the ingredient list. Even the world’s first spreadable granola, Kween Granola Butter, made a debut!
As with many other categories, seafood, demands quality and freshness and has now gone snack-able. From beautiful seafood tins with added ingredients that can be used to create a portable meal by brands like Freshé, to Good Catch’s “sustainable seafood free” tuna and Simply West Coast’s salmon nuggets, it seems seafood is now meant to be on-the-go.
Health focused food and beverages are nothing new especially as consumers are adopting new diets like paleo, keto, vegan, and a general mindfulness for nutrition and wellbeing. Categories such as Ice Cream, Sugar Confectionery and Chocolate Confectionery have been finding ways to create better-for-you (BFY) products that appeal to a wider audience. Virtually every dark chocolate product at the Fancy Food Show called out superfood cacao rather than dark chocolate—coinciding with our 2018 Top 10 Trend, The Future is Super. We saw products touting cacao's BFY features; less sugar, less fat than chocolate such as Navitas Cacao Sweet Nips, DNX Daily Nutrition Bars and a wave of cacao powders to bake and create decadent beverages with.
